The Challenge: A High-Stakes Move

When the non-profit organization Mainstream prepared to move to a new facility, they inherited a kitchen that was far below modern standards. The existing setup was plagued by a primitive “fan-in-a-box” make-up air system, improper hood clearances, and roof leaks caused by poorly installed exhaust fans. Faced with a tight budget and an outdated infrastructure, the organization needed a way to build a professional-grade kitchen without starting from scratch.

The Strategy: Asset Recovery & System Integration

Since Mainstream had previously invested in a modern ventilation system at their old location, we proposed a strategic relocation. We decommissioned and removed the high-quality hood, fan, and MUA units from their outgoing building, then carefully integrated them into the new facility. This approach saved the client thousands in equipment costs while ensuring they ended up with a far superior system than the one they inherited.

The Execution: Infrastructure & Polish

Relocating a system isn’t as simple as “plug and play.” Our team managed the entire technical transition:

  • Mechanical Overhaul: We coordinated with roofers and electricians to ensure the roof penetrations were properly sealed and the electrical service was up to code.
  • Gas-Fitting & Compliance: We upgraded the gas lines to support the new equipment, as well as the added load of a MUA unit that heats.
  • Custom Fabrication: To give the kitchen a cohesive, professional finish, we fabricated custom stainless steel skirting to enclose the hood, ductwork and fire suppression piping. This finishing touch protects the system and creates a clean, institutional-grade look.

The Result: A Partnership for the Community

Beyond the technical build, we were proud to support Mainstream’s mission by donating two commercial appliances to help round out their new space. The final result is a safe, efficient, and code-compliant kitchen that allows the organization to focus on what matters most: serving the community.
